Caprese Salad Extraordinaire

As a rule a caprese salad is made with basil, mozzarella, tomatoes, olive oil and salt to represent the Italian flag.  I took some liberty in shaking up the traditional ingredients a bit.  Here is my version of a caprese salad. The smoked mozzarella and lemon juice add a bold yet delicious compliment to the zesty basil leaves.

Prep Time: 10 – 15 mins

Serves: A family of 4 – 5 if you love salads. Cut recipes in half if you only eat small salads.


5 oz baby Arugula

2 – 3 large Basil stems, leaves chopped up coursely

8 oz Smoked mozzarella cheese, cut in strips

6 – 12 small Tomatoes, cut in half

1 can of black Olives

1 large mild Onion chopped in rings

3 – 4 small Sweet peppers

Juice from half a lemon

Olive Oil

Combine all ingredients in a large bowl, lightly drizzle with olive oil, and lightly salt and pepper.  Mix well. Serve immediately.
