Shiitake and Asparagus Savory Sauce

This is an absolutely amazing sauce that can be served over a number of dishes. We served it over bean threads for this meal however it could be used over mashed potatoes at thanksgiving dinner, any grain, or in my opinion, it would be incredible over a wild rice blend. The earthy yet bold flavors of shiitake and asparagus pair well together and complement each other. If you love asparagus and shiitake mushrooms, you will love this. It was tempting to leave the noodles out entirely and just eat bowls of this sauce straight.

Prep time: about 30 mins


10 oz sliced Shiitake mushrooms (2 – 5 oz packages pre-sliced)

1 bunch of fresh Asparagus chopped

1 bunch Green onions trimmed and chopped

One medium handful of fresh Parsley, chopped.

1 Tbl Extra Virgin Olive Oil

No-Beef Seasoning or Vegetable Bouillon Paste

Add to your frying pan your shiitake mushrooms, asparagus, green onions, parsley and oil.

Stir a lot to prevent burning and keep oil from smoking.

Adding in Veggie Bouillon paste. Added a couple heaped teaspoons and about 1/2 cup of water. You can vary this amount to make your sauce as thick or thin as you want it. You want your sauce to be have a very rich flavor so sneak a bite here and there to make sure it’s just right. Heat on Med Low, stirring frequently so the flavor spreads evenly and nothing burns.

All done and ready to serve over whatever you desire. Some suggestions are to serve over a meatloaf (vegetarian of course), wild rice, beans or lentils, potatoes or roasted vegetables. Use your imagination and let me know in the comments below what you have served it over.
